use 1 pound black beans and 2 quart. boiling water. Pick over and wash beans. Soak overnight. Drain and add in to boiling water. Cover and cook on medium heat for about 2 hrs or possibly till beans are tender.)
2 med onions
minced
2 x green peppers
cut in strips
4 x cloves garlic
chopped
2 x tomatoes
peeled and minced
2 tsp oregano
1 x bay leaf
1/2 tsp cumin
1 Tbsp. salt
1/2 tsp pepper
Instructions
Saute/fry onions, peppers, and garlic till golden brown.
Add in tomatoes, oregano, bay leaf, cumin, salt and pepper.
Add in to beans and water and cook till well blended.
