Black Bean Puree

Ingredients

  • 1 large can of black beans
  • 1/2 red or yellow onion; small dice
  • 1 garlic clove; minced
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1/4 cup apple cider
  • 1 salt and pepper

Instructions

  1. Sweat onions in olive oil until caramelized.
  2. Add garlic.
  3. Saute 30 seconds or until fragrant.
  4. Add black beans.
  5. Toss.
  6. Season.
  7. Add vinegar.
  8. Cook until nearly evaporated.
  9. Transfer to a food processor or use a stick blender.
  10. Add apple cider little by little to achieve desired consistency.
