Ingredients
- 3 c. cooked & mashed sweet potatoes
- 1 c. sugar
- 1/3 c. soft butter
- 1/2 c. lowfat milk
- 2 Large eggs
- 1 teaspoon vanilla
Instructions
- Combine all ingredients and beat well with mixer.
- Pour into buttered 1 1/2 qt casserole dish.
- Top with the following: 1 c. brown sugar 1/3 c. melted butter 1 c. minced pecans 1/3 c. flour
- Blend coconut, brown sugar, flour and nuts.
- Add in melted butter and mix well.
- Bake at 350 degrees for 20 min or possibly till topping is brown and crunchy.
- Serves 6 to 8.
