Ingredients
- 8 ounce cream cheese
- 2 lb confectioners sugar", "1 tsp almond extract green food coloring", "1 c. minced almonds", "1 c. fresh cranberries, or possibly frzn rinsed and liquid removed
Instructions
- In a bowl, mash cream cheese till light and fluffy.
- Gradually beat in confectioners sugar.
- Beat in almond extract and sufficient green food coloring to make a bright green.
- Knead in almonds.
- Line a 9 inch square pan with foil and press half of the fudge into an even layer.
- Place cranaberries proportionately over fudge.
- Cover with remaining fudge and press till even.
- Refrigeratefor several hrs.
- Cut into 1 inch squares with a sharp knife.
- Store in Refrigerator till ready to serve.
- Makes 81 one inch squares.
