Ingredients
- 1/2 lb Grnd round
- crumbled
- 2 x Cloves garlic
- 1 med Onion
- finely minced
- 2 Tbsp. Fresh parsley
- finely minced
- 1 Tbsp. Cilantro
- finely minced
- 1/2 tsp Dry whole thyme
- 4 c. Beef broth
- 16 ounce Canned pinto beans
- rinsed and liquid removed
- 16 ounce Canned hominy
- rinsed and liquid removed Salt and pepper
- to taste Onions
- sliced thin Jalapenos
- sliced thin Fresh cilantro
- finely minced
Instructions
- Brown grnd round in lightly greased skillet.
- Add in garlic and onion and cook till onion is lightly browned.
- Add in parsley, cilantro, and thyme and mix.
- Transfer beef mix to a soup pot.
- Add in beef broth, pinto beans, hominy and salt and pepper.
- Bring mix to a boil; reduce heat and simmer for 30 min.
- Serve with garnishes.
