Bean Chili

Ingredients

  • 1 small onion
  • chopped
  • 12 red bell pepper
  • chopped
  • 1 (8 ounce) can tomatoes (or 2-3 fresh chopped tomatoes)
  • 1 12 teaspoons ground cumin
  • 1 dried chili
  • ground
  • 12 teaspoon oregano
  • 12 teaspoon salt
  • to taste
  • 1 (8 ounce) can kidney beans
  • 1 (8 ounce) can black-eyed peas

Instructions

  1. Fry up the onion in some olive oil until clear (medium heat).
  2. Add the red pepper and fry until soft.
  3. Add tomatoes and spices and bring to a simmer.
  4. Add beans.
  5. Simmer for about an hour.
  6. OR skip steps 2-5 and put everything in a crock pot.
  7. Don't forget to fry the onions first otherwise they will stay hard.
