Ingredients
- 3 12 lbs potatoes
- peeled
- cut into 1 inch cubes
- 1 medium onion
- finely chopped
- 3 stalks celery
- cut in half
- 12 cloves garlic
- peeled & chopped
- 12 teaspoon salt
- 34 cup 2% fat cottage cheese
- drained
- 12 cup buttermilk
- 3 tablespoons fresh basil
- finely chopped
Instructions
- Cover the potatoes with water add the celery, onion, garlic& salt.
- Cook until tender (apprx 15-20 minutes).
- Remove celery& discard.
- Drain well through a sieve so you don't lose the onion& garlic.
- Mash the potatoes.
- Combine Cottage cheese, buttermilk& Basil, add to potatoes, mix until smooth.
- Reheat over very low heat.
