Ingredients
- 2 tsp canola oil
- 2 x cloves garlic minced
- 5 ounce roasted red peppers with liquid
- 1 c. snow peas
- 6 lrg shrimp
- 8 lrg basil leaves minced
- 1/8 tsp salt and pepper
- 1/2 c. cooked brown rice
Instructions
- In a large skillet, heat 2 teaspoon canola oil over medium heat.
- Add in 2 cloves garlic, minced, and 1 5-ounce.
- jar roasted red peppers packed in water, sliced with their liquid, and cook for 5 min.
- Add in 1 c. snow peas and 6 large shrimp and cook over medium high meat for 3 to 4 min, stirring occasionally.
- Add in 8 large basil leaves, minced, and 1/8 teaspoon each salt and black pepper.
- Serve over 1/2 c. cooked brown rice.
- Serves 1.
- NOTES : This was in the Feb. 16, '99 Family Circle.
- Since their are two of us I did double the recipe except for the basil and the oil.
