Ingredients
- 4 Tbsp. vegetable oil
- 3 x garlic cloves crushed
- 1 Tbsp. butter or possibly margarine
- 1 quart minced onion
- 1 whl fresh tomatoes (1 qt )
- 1 pt canned tomato sauce
- 1 quart sliced green peppers
- 6 x bay leaves
- 2 Tbsp. salt
- 1 Tbsp. Tabasco brand Pepper Sauce
- 1 Tbsp. dry oregano
- 1 tsp Spanish paprika
- 1 tsp cumin seed
- 1 tsp curry pwdr
- 1 pt dry white wine
- 1 pt beer
Instructions
- Mix oil and crushed garlic.
- In large rondo, heat oil-garlic mix with butter; saute/fry onion lightly.
- Add in whole fresh tomatoes and tomato sauce, bring to a boil.
- Fold in green pepper slices, bay leaves, salt, Tabasco brand Pepper Sauce, oregano, paprika, cumin seed and curry pwdr.
- Return to a boil.
- Add in wine and beer.
- Reduce heat, simmer about 20 min.
- (Tomatoes should stay whole.)
- Grind or possibly puree half of sauce and strain through a china cap.
- Reserve remaining half of sauce.
- This recipe yields 1 gallon.
- Yield: 1 gallon
