Ingredients
- 1 1/2 c. water
- 1 c. barley
- uncooked
- 1 1/2 c. fresh parsley
- 1/2 c. fresh cilantro
- 2 Tbsp. pine nuts
- toasted
- 1/4 c. fat-free Parmesan cheese
- 2 Tbsp. water
- 1 Tbsp. lemon juice
- 1 Tbsp. extra virgin olive oil
- 3/4 tsp salt
- 1/8 tsp black pepper
- 1 1/2 c. zucchini
- diced
- 1 1/2 c. plum tomato
- whole
- diced
- 1/2 c. red onion
- diced
Instructions
- Bring 1 1/2 c. water to a boil in a medium saucepan.
- Add in barley; cover, reduce heat, and simmer 13 min.
- Remove from heat; let stand, covered 5 min.
- Combine parsley and cilantro in a food processor; process till chopped.
- Add in pine nuts; process till chopped.
- Add in cheese and next 5 ingredients; process till well-blended.
- Spoon the barley into a bowl.
- Stir in the pesto, zucchini, tomato and onion.
