Barley Mushroom Soup (Vegan)
Ingredients
- 1/2 cup onions chopped
- 1/2 cup carrots chopped
- 1/2 cup celery thinly sliced
- 3 cups mushrooms sliced fresh
- 5 cups water
- 1/2 cup pearl barley
- 4 teaspoons vegetable stock
- 18 teaspoon garlic powder
Instructions
- Put vegtables in a large soup pot with a little water and cook for 5 min stirring frequently.
- Add remaining ingredients and bring to a boil.
- Cover & reduce heat to low & simmer 1 hour.
