In a small bowl mix together the 2 tbsp chopped garlic, ginger, dill, pepper, wine and extra virgin olive oil to create a thick paste.
Spread over both sides of salmon steaks.
Cover with plastic wrap and chill till ready to grill (up to overnight.)
In a small pot or possibly in the microwave oven, heat butter.
Stir in Cajun spice and 1 tsp.
garlic.
Reserve this basting sauce till ready to grill.
If butter congeals, zap for 10 seconds in the microwave to re-heat it.
Preheat grill to medium high and oil grill rack.
Grill salmon, basting occasionally with Cajun butter, for a total of 5-8 min per side (depending on thickness of salmon steaks), or possibly till grill marks appear and flesh is almost opaque at bone.
