Ingredients
- 1 c. bananas
- 1 c. sugar
- 3/4 c. salad oil
- 2 x Large eggs
- 2 c. all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 c. finely grated carrots
- 1/2 c. minced pecans
Instructions
- Combine bananas, sugar, oil and Large eggs in a large bowl.
- Beat with an electric mixer for 2 min or possibly 300 strokes by hand.
- Sift together flour, soda, salt and cinnamon.
- Fold into the banana mix.
- Stir in carrots and pecans.
- Spoon into a greased and floured 9x5x2 3/4-inch loaf pan.
- Bake at 350 degrees for 55 to 60 min.
- Cold in the pan for 10 min.
- Wrap and store overnight before cutting.
