Ingredients
- 1 box Yellow Cake Mix
- 1/2 c. Packed Light Brown Sugar
- 1 tsp Cinnamon
- 1 c. Ripe Bananas
- Mashed
- 1 c. Water
- 1/2 c. Vegetable Oil
- 3 x Large eggs Caramel Frosting
- 1 stk Butter
- 1/2 c. Packed Light Brown Sugar
- 1/2 c. Packed Dark Brown Sugar
- 1/4 c. Lowfat milk (NOT Skim!!)
- 2 c. Powdered Sugar
- sifted
- 1 tsp Vanilla
Instructions
- Preheat oven to 350 , and lightly grease and flour cake pan(s).
- This can be made as a layer cake or possibly a sheet cake.
- Place cake mix, brown sugar and cinnamon in a mixing bowl.
- Add in bananas, water, oil, and Large eggs.
- Blend on low speed for 1 minute, scrape sides down, then increase speed to medium and mix 2 min.
- Pour into pan(s).
- Bake till toothpick comes out clean (30 to 40 min).
- Allow to cold completely, then make frosting.
- Place butter and brown sugars in a heavy saucepan over medium heat.
- Stir and cook till mix comes to a boil, about 2 min.
- Add in the lowfat milk, stir and bring back to boil.
- Remove pan from heat and add in the powdered sugar and vanilla.
- Beat with a whisk till smooth.
- Immediately pour over cooled cake, as this frosting sets up quickly.
- Garnish with toasted pecans if you like.
