Ingredients
- 6 green bananas
- peeled and mashed
- 4 ears of corn
- shucked and off cobb (I cheat with frozen out of season)
- 2 cups green beans
- cut to 2-inch
- 1 bunch greens
- large and chopped (any you have
- collards
- spinach
- cabbage
- pumkin leaves
- chaya
- etc.)
- 2 cups coconut milk (regular milk ok)
- salt
Instructions
- Zap the corn and beans al dente in your microwave.
- Add bananas.
- Cook for about 10 minutes on top of the stove.
- Add greens and cook til just done.
- Add milk, mix well and reheat without boiling.
- Season to taste and serve hot or cold.
