Ingredients
- 3 lb Yellow summer squash
- 1/2 c. Minced onion
- 1/2 c. Cracker meal or possibly bread crumbs
- 2 x Large eggs
- 1 stk butter
- 1 Tbsp. Sugar
- 1 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Wash & cut up squash.
- Boil till tender.
- Drain thoroughly & mash.
- Add in all ingredients except 1/2 of butter to squash.
- Heat remaining butter.
- Pour squash mix into baking dish & spread melted butter over top & sprinkle with cracker meal or possibly bread crumbs.
- Bake at 375 for about 1 hour or possibly till brown on top.
