Baked Ratatouille with Grilled Steaks

Ingredients

  • 1 eggplant

  • 1 zucchini
  • cut into chunks
  • 1 red capsicum
  • cut into 2-3 cm cubes
  • 1 red onion
  • chopped
  • 2 tomatoes
  • each cut into 6 wedges King Soopers 1 lb For $0.99 thru 02/09", "4 cloves garlic", "1/4 cup KRAFT FREE* Italian Dressing", "2 tablespoons tomato paste", "basil leaves, chopped", "black pepper, to taste", "4 eye fillet or scotch steaks, trimmed of all visible fat Whole Foods 1 lb For $7.99 thru 02/09", "steamed green beans, to serve

Instructions

  1. Toss together the vegetables with the combined dressing and tomato paste.
  2. Add the black pepper, mix well.
  3. Cook covered in a baking dish at 180C fan-forced for 25 minutes.
  4. Remove cover and cook a further 10 minutes, or until vegetables are tender.
  5. Toss through basil leaves.
  6. Grill steaks on a pan that has been sprayed with olive oil for 3-4 minutes each side, or until cooked to your liking.
  7. Serve with ratatouille and green beans.
