Ingredients

  • 3/4 lb rice Salt as needed
  • 2 x Large eggs
  • 2 c. lowfat milk
  • 1/2 lb Cheddar cheese grated
  • 1 c. minced parsley
  • 2 Tbsp. butter melted
  • 3/4 tsp grated onion juice
  • 1 Tbsp. paprika

Instructions

  1. Cook rice in plenty of rapidly boiling lightly salted water till tender, about 20 min.
  2. Refrigeratein cool water to stop cooking, then drain.
  3. Beat Large eggs slightly.
  4. Heat lowfat milk over medium heat just till hot, add in 1 tsp.
  5. salt and stir to dissolve.
  6. Add in to Large eggs.
  7. Add in cheese, parsley, butter, onion juice and rice and place in buttered 13- by 9-inch baking pan.
  8. Bake at 350 degrees till set, 30 to 40 min.
  9. Garnish with paprika and serve.
  10. This recipe yields 12 servings.
