Ingredients

  • 6 x minced bacon rashers
  • 1 c. buckwheat flour
  • 2/3 c. brown rice flour
  • 3/4 c. rice wholegrain flakes
  • 1 Tbsp. baking pwdr
  • 1 c. soy lowfat milk
  • 1/4 c. EACH minced fresh basil & chives
  • 3 ounce melted dairy-free margarine

Instructions

  1. Preheat oven to 420F, prepare pans.
  2. Cook bacon in pan, stirring, till crisp; drain on absorbent paper.
  3. Combine bacon with sifted flours & remaining ingredients in bowl; mix well.
  4. Spoon into pans & bake for 20 mins or possibly till muffins are cooked through.
  5. Makes 12.
