Baby Shrimp with Butter Lettuce Salad

Ingredients

  • 12 oz. shrimp
  • cooked and cleaned
  • 4 sm. butter lettuce heads (1 head per person)
  • Fresh parsley
  • for garnish
  • 1 cup olive oil
  • 2 tbsp. red wine vinegar
  • 4 tbsp. fresh lemon juice
  • 1/2 tsp. dry mustard
  • 1/2 tsp. oregano
  • 2 cloves garlic
  • crushed
  • Freshly ground black pepper
  • to taste
  • Salt
  • to taste

Instructions

  1. Blend all ingredients for the dressing in a food blender or with a wire whip.
  2. Chill before serving.
  3. Remove a few of the center leaves of the heads of butter lettuce.
  4. Chop and mix with the shrimp.
  5. Place the lettuce bowl on a plate and pour a bit of the dressing over it.
  6. Place the chopped lettuce and shrimp mixture in the center of the bowl.
  7. Add just a bit of the dressing and serve.
  8. Garnish with the parsley.
