Ingredients

  • 1/2 lb Thick-cut Irish bacon
  • 1/4 c. Cider vinegar
  • 1 tsp Sugar
  • 1 tsp Dry mustard
  • 1/4 tsp Salt
  • 1/4 tsp Cracked black pepper
  • 1/3 c. Vegetable oil
  • 1/2 lb Prewashed baby salad greens

Instructions

  2. Slice bacon crosswise into 1/4-inch thick strips.
  3. Fry till crisp in a heavy skillet; drain and set aside.

  5. In a pint jar with a lid, whisk together vinegar, sugar, mustard, salt and pepper.
  6. Add in oil; cover and shake till combined.

  8. Divide the greens among 8 chilled salad plates; top with bacon.
  9. Shake dressing and drizzle over salads.
  10. Serve immediately.
