Ingredients
- 1 medium avocado
- nonstick cooking spray (as needed)
- 1 14 cups onions
- julienned
- 1 12 cups sweet green peppers
- julienned
- 1 12 cups sweet red peppers
- julienned
- 1 cup cilantro
- 1 12 cups fresh salsa
- 12 8-inch flour tortillas
- 1 cup fresh tomato
- diced
- 13 cup onion
- diced
- 12 clove garlic
- minced
- 13 teaspoon jalapeno pepper
- minced
- 2 teaspoons cilantro
- minced
- 1 pinch cumin
- 1 12 teaspoons fresh lime juice
Instructions
- Prepare salsa in advance by combining all ingredients.
- Refrigerate.
- Spray skillet with non-stick cooking spray.
- Lightly saute the onion and green and red peppers.
- Mince cilantro, avocado slices.
- Put 2 large spoon fulls on tortilla's.
- Fold over and serve.
