Avocado, Pepper and Corn Quesadillas

Ingredients

  • 1 red pepper
  • seeded
  • quartered
  • 1 cup Cracker Barrel Shredded Old Cheddar Cheese
  • divided
  • 4 large flour tortillas
  • 1 cup frozen corn
  • 1 avocado
  • cut into thin slices
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup light sour cream
  • 1/4 cup Kraft BBQ Ranch Dressing

Instructions

  1. Heat barbecue to medium heat.
  2. Grill peppers 3 min.
  3. on each side or until crisp-tender.
  4. Remove from barbecue; cut into 1/2-inch chunks.
  5. Reduce barbecue to low heat.
  6. Sprinkle 2 Tbsp.
  7. cheese onto half of each tortilla.
  8. Top with peppers, corn, avocados, cilantro and remaining cheese.
  9. Fold tortillas in half; press tops to flatten slightly.
  10. Grill 2 to 3 min.
