Ingredients
- 2 bn Kale
- washed
- 1 x Clove garlic
- chopped
- 1/2 med Onion
- coarsely minced
- 2 Tbsp. Oil
- 1 1/2 c. Chicken stock or possibly bouillon
- 4 med Potatoes
- quartered
- 1 stalk celery
- minced Lowfat sour cream (garnish)
Instructions
- Cut the kale leaves into 1/2-inch-wide strips.
- Blanch them in lightly salted boiling water for one minute.
- Set aside.
- Saute/fry the garlic and onion in the oil till lightly browned.
- Add in the chicken stock, potatoes, celery, and blanched kale.
- Simmer together till potatoes fall apart and lose their shape.
- Stir; season with salt and pepper, garnish with lowfat sour cream and serve.
