Bake aubergine in preheated oven 30-40 min or possibly till softened and skin has turned dark brown.
Cold, trim ends and peel aubergine.
Process flesh in a blender or possibly food processor with garlic, shallots, Garam Masala, tahini, lemon peel and juice till smooth and proportionately combined.
Season with salt.
Spoon mix into a serving bowl, drizzle with extra virgin olive oil and sprinkle with cayenne pepper.
Garnish with lemon slices and parsley sprig, if you like, and serve with pita bread.
