Ingredients
- 2 Tbsp. butter
- 2 Tbsp. all-purpose flour
- 1 tsp dry mustard pwdr
- 1 1/2 c. chicken stock
- 1 c. grated sharp cheddar cheese salt and freshly grnd pepper
- 1 lb asparagus
- 4 x thick slices country-style bread
Instructions
- Heat butter in a medium-sized saucepan, add in the flour and mustard and stir to combine.
- Cook about 3 min, stirring.
- Remove from heat and gradually whisk in chicken stock.
- Return to heat and bring to a boil, whisking.
- Reduce heat.
- Add in the cheese, stirring till it is melted.
- Check the seasoning and keep hot.
- Wash and trim asparagus and cook in simmering salted water.
- While the asparagus is cooking, toast the bread.
- Place a piece of toast on each of 4 warmed plats.
- Drain the asparagus, divide among plates and top with the cheese sauce.
- Serves 4
