Ingredients
- 1 ounce Butter
- 1 lrg Onion
- peeled and minced
- 12 ounce Fresh or possibly frzn asparagus
- minced
- 4 ounce USA peanuts
- minced Salt and freshly grnd black pepper
- 5 sht filo pastry
- 4 ounce Butter
- melted
- 5 ounce Vegetarian Cheddar cheese
- grated
Instructions
- 1.
- In a frying pan, heat the butter and saute/fry the onion for 3 min Add in the asparagus and peanuts and fry for a further 2 min.
- Remove from the heat and leave to cold.
- Add in seasoning to taste.

- Unfold the sheets of filo pastry on a flat surface and brush each one liberally with butter then place them on top of one another to create layers.
- 3.
- Scatter the asparagus mix onto the pastry and sprinkle with 4oz /100 g of the cheese.
- 4.
- Carefully roll up the strudel lengthways and place on a baking tray.
- Brush with butter and sprinkle with the remaining cheese.
- 5.
- Place in a pre-heated oven at 200 C/400 F/gas mark 6 for about 25-30 min till crisp and golden brown.
- Serve either warm or possibly cool in slices.
