Ingredients
- 1/2 lb Fresh arugula leaves
- washed and dry
- 4 x Roma tomatoes
- sliced
- 1/2 c. Red onion
- sliced
- 1/4 c. Fresh minced parsley
- 2 tsp Red wine vinegar
- 1/4 c. Red onion Salt & pepper
Instructions
- Remove the stems from the arugula and place the leaves in a salad bowl.
- Fold in the tomatoes, onion and parsley.
- Place the vinegar in a separate bowl and slowly whisk in the oil.
- Season with salt and pepper.
- Pour the dressing over the salad and toss to blend well.
- Serves 4.
