Artichoke Heart Rosti

Ingredients

  • 3 cups frozen shredded hash brown potatoes
  • 1 6.5-oz jar marinated artichoke hearts
  • drained and chopped ( 3/4 cup)
  • 2 Tbs. chopped fresh parsley
  • 2 Tbs. vegetable oil
  • divided

Instructions

  1. Rinse hash browns under warm running water until thawed.
  2. Drain on paper towels.
  3. Combine hash browns with artichoke hearts and parsley in bowl.
  4. Heat 1 Tbs.
  5. oil in skillet over medium-high heat.
  6. Press potato mixture into circle in pan with spatula.
  7. Drizzle 1 1/2 tsp.
  8. oil over top.
  9. Cook 6 to 7 minutes.
  10. Invert rosti onto plate.
  11. Add remaining 1 1/2 tsp.
  12. oil to pan.
  13. Slide rosti into skillet.
  14. Cook 6 minutes more, or until browned on second side.
  15. Slide onto serving plate, and let stand 2 minutes before slicing.
