Apricot Cherry Chocolate Chip Cookies

Ingredients

• 2/3 cup butter
• melted
• 2 cup brown sugar
• 2 large eggs
• 2 tbsp hot water
• 1/2 tsp cherry extract
• 1 tsp vanilla extract
• 2 2/3 cup all-purpose flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1/4 tsp salt
• 1/2 cup dried cherries
• chopped
• 1/2 cup dried apricots
• chopped
• 1/2 cup mini chocolate chips

Instructions

1. Mix melted butter, brown sugar, hot water, vanilla extract, cherry extract and eggs together until well combined.
2. Sift together flour, baking soda, baking powder and salt.
3. In stages, add flour mixture to butter mixture.
4. Fold in dried cherries, apricots and mini chocolate chips.
5. Drop by rounded tablespoon onto a parchment paper lined baking sheet.
6. Cook 8-12 mins.
7. Cool on pan for 5 mins.
8. Remove to wire rack to cool completely.
