Ingredients

  • 175 gm Butter
  • (6oz)
  • 25 gm Golden brown syrup
  • (1oz)
  • 125 gm Light soft brown sugar
  • (4oz)
  • 250 gm Porridge oats
  • (8oz)
  • 50 gm Pumpkin seeds
  • (2oz)
  • 50 gm Dry
  • ready to eat apricots
  • roughly minced (2oz)

Instructions

  1. Preheat the oven to 180 C, 350 F, Gas Mark 4.
  2. Grease an 18 x 28cm (7 x 11 inch) swiss roll tin.
  3. Heat the butter and syrup together in a saucepan, add in the remaining ingredients.
  4. Turn the mix into the tin and spread proportionately.
  5. Bake in the preheated oven for 15-20 min.
  6. Allow to cold slightly, then cut into fingers and carefully remove from the tin.
  7. NOTES : A healthy, tasty snack ideal for packed lunch boxes.
