Amazing Leftover Chicken and Rice

Ingredients

  • 2 cups cooked rice
  • 3 cups leftover cooked chicken meat
  • 2 cups cooked vegetables
  • 12 ounces chive & onion cream cheese
  • 12-34 cup milk
  • 13 cup mayonnaise
  • 13 cup grated parmesan cheese
  • 1 cup grated mozzarella cheese

Instructions

  1. Spread rice in bottom of 2.5-3 quart casserole dish.
  2. Mix chicken meat with vegetables, spread on top of rice.
  3. Whisk cream cheese, milk, mayonnaise and parmesan (may need to microwave for 20-30 seconds to soften) and pour over the chicken and vegetables.
  4. Sprinkle mozzarella on top.
  5. Bake at 350 for 20 minutes, broil for the last 3 min to brown on top.
