Ingredients
- 2 cups granulated sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 cups all-purpose flour
- 1 12 cups vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 pinch salt
- 1 (8 ounce) soft cream cheese
- 1 (16 ounce) box powdered sugar
- 12 cup butter
- 1 cup pecans
- 1 teaspoon vanilla
Instructions
- Mix dry ingredients together in a bowl.
- Add oil and eggs and beat with a mixer, add carrots and mix on low speed.
- The mixture will be very thick.
- Prepare 3 round cake pans by adding butter and flour to bottoms and sides.
- Also cut a round piece of wax paper to fit the bottom of each pan(so cake will not stick).
- Add more butter on wax paper and dust w/flour.
- Pour mixture into pans and bake at 350 degrees 25 mins or until firm.
- For icing mix softened cream cheese,sugar,vanilla and butter until smooth.
- Decorate w/chopped pecans.
