Ingredients
- 2 med Onions
- Cut In Half And Thinly Sliced
- 2 x Leeks
- Washed And Thinly (2 to 3) Sliced
- white part only
- 2 bn Scallions
- minced
- 2 x Cloves Garlic
- crushed (2 to 3)
- 2 tsp Chopped Fresh Ginger
- 9 c. Water
- 1/4 c. Soy Sauce Freshly Grnd Black Pepper
- to taste
- 1 pch Grnd Cayenne
Instructions
- Place the onions, leeks, scallions,garlic, and ginger in a large soup pot with 1 c. of the water.
- Cook, stirring over medium heat for 5 min.
- Add in the remaining ingredients, reduce the heat to low, cover, and cook for another 55 min to allow flavors to blend.
- Variation: For a heartier soup, add in 2 potatoes, peeled and cut into chunks, when you add in the remaining ingredients.
