Ingredients
- 2 Tbsp. Extra virgin olive oil
- 1 Tbsp. Red wine vinegar
- 3 Tbsp. Crumbled feta cheese
- 1/4 tsp Oregano
- Salt to taste
- Black pepper
- freshly grnd to taste
- 3 c. Loosely packed torn spinach leaves
- 1 sm Tomato sliced
- 2 slc Red onion separated into rings
- 2 x Pocket breads halved
- 33/4 ounce Norway sardines in oil - (1 can) liquid removed
Instructions
- In a small bowl combine oil, vinegar, cheese, oregano, salt and pepper; whisk to blend.
- Toss spinach, tomato and onion with dressing.
- Fill breads with spinach mix and sardines, dividing equally.
- This recipe serves 2.
