Ingredients
- 2 1/2 lb Lean grnd chuck
- 1 lb Lean grnd pork
- 1 c. Finely minced onion
- 4 x Garlic cloves
- finely chpd.
- 1 can Budweiser beer (12 ounce.)
- 8 ounce Hunts tomato sauce", "1 c. Water", "3 Tbsp. Chili pwdr", "2 Tbsp. Grnd cumin", "2 Tbsp. Wylers beef-flavor instant bouillon (or possibly 6 cubes)
- 2 tsp Oregano leaves
- 2 tsp Paprika
- 2 tsp Sugar
- 1 tsp Unsweetened cocoa
- 1/2 tsp Grnd coriander
- 1/2 tsp Louisiana warm sauce
- to taste
- 1 tsp Flour
- 1 tsp Cornmeal
- 1 Tbsp. Hot water
Instructions
- In large saucepan or possibly Dutch oven, brown half the meat; pour off fat.
- Remove meat.
- Brown remaining meat; pour off all fat except 2 Tbsps.
- Add in onion, garlic; cook and stir till tender.
- Add in meat and remaining ingredients except flour, cornmeal and hot water.
- Mix well.
- Bring to boil; reduce heat and simmer covered 2 hrs.
- Stir together flour and cornmeal; add in hot water.
- Mix well.
- Stir into chili mix.
- Cook covered 20 min longer.
- Serve warm.
- Makes 2 qts.
